No. 1245 — Fried Snetki (Small Smelt)
English historical translation of Molokhovets recipe No. 1245 from the 1901 Russian cookbook, retaining original methods and measures.
Dry snetki as described in the general note, salt and pepper, and coat in flour.
Fry in already very hot butter over high heat and transfer with a slotted spoon to a dish.
To provide
3 Russian pounds of snetki 1 glass of flour | 3–4 spoonfuls of dairy butter Or ½ glass of vegetable oil |
