No. 12 — Broth of Herbs for Strong Stomachs

An English translation of original recipe No. 12 from Elena Molokhovets’ Russian cookbook (1901), with historical quantities and Russian source.

Wash and chop a large handful of sorrel, a small handful of lettuce, an equal amount of young beet greens or purslane, and a little chervil. Put them into 2½ glasses of water or veal broth, boil for half an hour, strain, salt and add a small piece of butter.

Historical editorial note. The phrase “for strong stomachs” is historical wording, not medical advice.
Source and context: Original recipe No. 12 is preserved in the Russian 1901 edition. The historical quantities have not been modernized. For interpretation of units see historical measurements; modern food-safety standards take precedence.
