No. 896 — Calf's Feet Fried in Batter
English historical translation of Molokhovets recipe No. 896 from the 1901 Russian cookbook, retaining original methods and measures.
Boil the feet as described in No. 895.
Shortly before serving, prepare batter according to Nos. 298–300. Dip the feet in the batter and fry in melted butter or deep-frying fat as in No. 297.
Serve with fresh salad, plum purée No. 2376, pickled cherries, or even rum sauce No. 362, prepared less sweet than it would be for a pudding.
