No. 861 — Gastronomic Veal Chops Wrapped in Beef
English historical translation of Molokhovets recipe No. 861 from the 1901 Russian cookbook, retaining original methods and measures.
Take about 2 Russian pounds of ordinary tender beef, cut into thin slices and beat well with a wooden mallet. Season thoroughly with salt and pepper.
Prepare good veal chops, trimming away excess bone, and wrap each chop in the seasoned beef slices.
Fry in butter in a saucepan. At serving, remove and discard the beef wrapping and eat only the veal chops, which the author describes as exceptionally tasty.
The beef can be tied in place with string; remove the strings carefully before serving.
