No. 830 — Minced Beef Meatloaf Covered with Potato Mixture
English historical translation of Molokhovets recipe No. 830 from the 1901 Russian cookbook, retaining original methods and measures.
Prepare the meatloaf described in No. 829 and bake until almost done.
For the topping, peel 1 Russian pound of potatoes, boil in salted water, drain and mash immediately. Mix in ½ spoonful of butter and an egg.
Spread the potato mixture over the meatloaf, brush with egg and sprinkle with breadcrumbs.
To serve, add a spoonful of sour cream to the pan sauce and bring it to the boil, or serve with the brown sauces from Nos. 405–408.
