No. 807 — Roast Beef on a Spit

English historical translation of Molokhovets recipe No. 807 from the 1901 Russian cookbook, retaining original methods and measures.

Trim roast beef as directed above, tie with string and scatter sliced onion over it. Place in a stoneware bowl with 1½ glasses of Provençal olive oil, leave until the next day, turning and basting repeatedly.

Then salt, pepper, wrap in buttered waxed paper, fix to the spit and roast for three to four hours, basting with juices caught in a thick tinned copper dish or roasting tray.

Fifteen minutes before finishing, remove the paper, salt all over and allow the beef to brown. Continue as in Nos. 805–806.
