No. 752 — Small Pastry Shapes for Garnishing Vegetables

English historical translation of Molokhovets recipe No. 752 from the 1901 Russian cookbook, retaining original methods and measures.

Beat six egg yolks, ¼ Russian pound of fresh butter and ¼ glass of fine sugar until pale.

Stir in ½ Russian pound of flour, mix again and turn onto a board. Roll gently to about the thickness of a finger and cut into assorted decorative shapes.

Sprinkle with sugar, brush with butter using a feather, and bake for approximately ten minutes in a moderately heated oven, until lightly browned.

Historical editorial note: The original uses a feather as a pastry brush and gives a period baking time.
Original source: Read Russian recipe No. 752. Historical quantities and terminology are retained. See the measurements guide. Period preparation and storage methods are not modern safety guidance.
