No. 751 — Rice Croquettes
English historical translation of Molokhovets recipe No. 751 from the 1901 Russian cookbook, retaining original methods and measures.
From rice prepared as in the preceding recipe, with or without a filling (the source also cites No. 376), form elongated, rounded little pies resembling rolled pancake pies.
Dip in egg, coat with breadcrumbs and fry in deep fat. Serve with soup, sprinkled with fried green parsley No. 296.
