No. 716 — Fried Mushrooms
English historical translation of Molokhovets recipe No. 716 from the 1901 Russian cookbook, retaining original methods and measures.
Clean and wash porcini or other edible mushrooms, slice and coat in flour.
Melt ¼ Russian pound of butter and optionally fry one onion in it. Add mushrooms and salt, fry over moderate heat, turning to brown both sides.
When cooked, add ½ glass of sour cream, bring once to the boil, add dill and parsley, and serve.
Historical editorial note: The printed supplies specify one plate of cleaned mushrooms, one spoonful of flour, ¼ pound butter, ½ glass sour cream, optional onion, pepper, salt and parsley. Historical terminology does not establish mushroom identification.
