No. 714 — Fried Dried Mushrooms, for Meat Days or Fasting Days
English historical translation of Molokhovets recipe No. 714 from the 1901 Russian cookbook, retaining original methods and measures.
Rinse the required quantity of dried mushrooms and boil them in water until done.
Lift out of the cooking liquid, clean and trim, spread on the table, salt and coat in flour.
Fifteen minutes before serving, dip them into one of the batters Nos. 298–300 and coat in grated white bread. Arrange on a dish and moisten with the pan juices.
Historical editorial note: The digitized entry does not explicitly describe the frying step after the battering instruction; the title identifies this as fried mushrooms. No missing technique has been invented.
Original source: Read Russian recipe No. 714. Historical quantities and terminology are retained. See the measurements guide. Period preparation and storage methods are not modern safety guidance.
