No. 675 — Turnips Stuffed with Semolina Porridge

English historical translation of Molokhovets recipe No. 675 from the 1901 Russian cookbook, retaining original methods and measures.

Wash eight to twelve turnips, bring them once to the boil unpeeled, rinse again and trim the green tops. Cook in boiling salted water until soft.

Remove the skins, cut off the tops and carefully scoop out the centers. Mash the flesh thoroughly with thick semolina porridge cooked in milk and with butter. Season with salt and a little sugar.

Stuff the hollow turnips, replace their tops and arrange on a baking sheet. Put a small piece of butter on each and bake in the oven.

Serve with fresh butter.
