English historical translation of Molokhovets recipe No. 638 from the 1901 Russian cookbook, retaining original methods and measures.

Soak two Scottish herrings in water or, preferably, milk. Skin, remove their bones and chop finely.

Add one finely chopped onion previously fried in a spoonful of butter, ¾ glass of sour cream, two eggs, half a French roll soaked and squeezed dry, one grated raw apple and one full glass of cooked mashed potato.

Season with black and allspice pepper and nutmeg, and mix thoroughly. Transfer to a buttered tin or silver saucepan sprinkled with breadcrumbs and bake for three-quarters of an hour.

¾ glass of sour cream and 1½ spoonfuls of butter

3–4 black peppercorns and 3–4 allspice berries

1 large apple and 1 onion
