No. 635 — Potatoes Stuffed with Parmesan
English historical translation of Molokhovets recipe No. 635 from the 1901 Russian cookbook, retaining original methods and measures.
Prepare the potatoes as described in No. 634, removing their centers. Mash the scooped-out potato with good butter and add one teaspoon of grated Parmesan for each potato.
Replace the tops and place the potatoes in the oven. Serve hot.
