No. 603 — Potatoes Boiled in Their Skins
English historical translation of Molokhovets recipe No. 603 from the 1901 Russian cookbook, retaining original methods and measures.
Wash half to one osmushka of potatoes, an old Russian volume measure. Without peeling, put in a saucepan and add just enough water to cover.
First cook over a high heat. Once the water boils well, move to a low heat. Cooking takes about twenty minutes depending on potato size; test for tenderness with a fork.
Drain, peel while hot, place on a napkin and cover with it to keep warm. Serve with salt and fresh butter or good table butter.
