No. 514 — Green Peas in Pods with Browned Butter
English historical translation of Molokhovets recipe No. 514 from the 1901 Russian cookbook, retaining original methods and measures.
Boil three Russian pounds of green pea pods until tender according to the general note, then drain in a colander.
Transfer at once to a hot serving dish and cover with a hot napkin.
Serve separately with Polish sauce No. 442, made from browned butter with fried grated bread, or simply hot melted table butter.
