No. 502 — White Beans for Salad

English historical translation of Molokhovets recipe No. 502 from the 1901 Russian cookbook, retaining original methods and measures.

Cook 1½ glasses of beans according to the general note, adding a bunch of parsley and an onion. Drain in a sieve and transfer to a salad bowl.

Add one spoonful of Provençal olive oil. Instead of vinegar, which the author considers harmful with beans, use lemon juice or juice from gooseberries, cornelian cherries, apples or another fruit acid.

Add salt, pepper and fresh dill, then mix.

Historical editorial note: The claim that vinegar is harmful with beans is a historical opinion, not established modern dietary advice.
