No. 493 — Poppy-Seed or Hemp-Seed Milk
English historical translation of Molokhovets recipe No. 493 from the 1901 Russian cookbook, retaining original methods and measures.
Scald two glasses of white poppy seeds, though the author prefers grey seeds, with boiling water and let stand. Drain, scald again, drain and rinse in cold water.
Drain in a sieve, transfer to a stone bowl and rub with a wooden pestle until all the seeds have been crushed and the poppy mixture has turned pale.
Add two or three glasses of boiled water, stir, strain and squeeze out the liquid. Sweeten with two to four lumps of sugar.
