No. 4089 — Pickled Crayfish Tails
English historical translation of Molokhovets recipe No. 4089 from the 1901 Russian cookbook, retaining original methods and measures.
Boil large crayfish in salted water, remove the shells and pack the tail meat into a jar.
Boil fairly mild vinegar with only a small amount of spices, cool and pour over the meat.
The author says stronger vinegar is needed for longer storage, but milder vinegar gives better flavour and a shorter keeping time.
Serve the tails in salads, in red and white sauces, or in soup when made with milder vinegar.
Historical editorial note: Cooked shellfish in diluted vinegar is highly perishable. Acidity and safe refrigerated storage duration must be established by validated methods.
