No. 4071 — Herring Brine as a Substitute for Sardines in Sauces

English historical translation of Molokhovets recipe No. 4071 from the 1901 Russian cookbook, retaining original methods and measures.

Strain fresh herring brine first through a sieve and then through tightly woven linen.

Bottle and cork it securely for use in sauces as a substitute for sardines.

Historical editorial note: Used fish brine is not necessarily microbiologically safe and must not be treated as a validated shelf-stable condiment.
Original source: Read Russian recipe No. 4071. Historical quantities and terminology are retained. See the measurements guide. Period preparation and storage methods are not modern safety guidance.
