No. 4068 — Marinated Herring for Summer

English historical translation of Molokhovets recipe No. 4068 from the 1901 Russian cookbook, retaining original methods and measures.

Soak the fish, split along one side, remove the bones and skin, then reunite the two halves.

Pack in jars, layering with sweet wine apples that have been peeled, cored and thinly sliced.

Season with a little pepper, pour olive oil over each layer and fill the jar.

Tie with animal bladder and keep on ice.

Historical editorial note: Fish and fruit packed under oil are perishable and require modern validated cold-chain and storage controls.
