No. 4061 — Salting Wild Ducks

English historical translation of Molokhovets recipe No. 4061 from the 1901 Russian cookbook, retaining original methods and measures.

When hunters bring more wild ducks in summer than can be used fresh, the source cleans and splits the birds.

Salt them in small barrels with one lot saltpetre per pound salt, close with lids and resin and bury the barrels in ice.

Historical editorial note: Historical saltpetre curing and icehouse storage are not validated for safe game-bird preservation.
Original source: Read Russian recipe No. 4061. Historical quantities and terminology are retained. See the measurements guide. Period preparation and storage methods are not modern safety guidance.
