No. 4055 — Grainy Sturgeon Caviar
English historical translation of Molokhovets recipe No. 4055 from the 1901 Russian cookbook, retaining original methods and measures.
The source describes extracting roe from a freshly caught live sturgeon, mixing it immediately with a large quantity of snow and rubbing it through a fine sieve.
Snow and small eggs pass through, leaving the larger roe. The author repeats the snow treatment if needed to remove mucus.
Transfer the cleaned roe to a pot, salt and store in a moderately cold dry place.
Historical editorial note: Using snow to process raw fish roe can introduce contaminants, and unspecified salting and storage are not safe modern caviar production controls. Handling live sturgeon may also raise animal-welfare and legal concerns.
Original source: Read Russian recipe No. 4055. Historical quantities and terminology are retained. See the measurements guide. Period preparation and storage methods are not modern safety guidance.
