No. 4052 — Dried Fish in General
English historical translation of Molokhovets recipe No. 4052 from the 1901 Russian cookbook, retaining original methods and measures.
The author says any white-fleshed fish can be dried in the oven in the same manner as roach in recipe No. 4051, then used in soups during fasting.
Historical editorial note: Fish drying requires validated temperature, salt and moisture controls to prevent spoilage and parasites.
