No. 4046 — Freezing Domestic and Wild Poultry

English historical translation of Molokhovets recipe No. 4046 from the 1901 Russian cookbook, retaining original methods and measures.

In late autumn gut and wash well-fed birds and tie them in pairs.

Dip in water and immediately hang outdoors in freezing weather, repeating several times.

When an icy crust forms around each bird, pack in boxes and cover with snow.

The author claims poultry can be kept this way all winter.

Historical editorial note: Repeated water dipping and freezing outdoors create contamination and temperature-control risks; this is not modern safe freezing guidance.
