No. 4038 — Keeping Cod, Salmon and Other Fish Fresh
English historical translation of Molokhovets recipe No. 4038 from the 1901 Russian cookbook, retaining original methods and measures.
The author proposes splitting cod, salmon or another fish lengthwise, putting granulated sugar inside and hanging it vertically.
As the sugar slowly dissolves, the source says it penetrates the fish.
The stated quantity is one tablespoon sugar for five to six pounds fish.
Historical editorial note: Sugar applied this way is not a safe method to preserve raw fish; refrigeration and validated handling are essential.
