No. 4037 — Preserving and Transporting Fish
English historical translation of Molokhovets recipe No. 4037 from the 1901 Russian cookbook, retaining original methods and measures.
The author claims fresh fish can be preserved for twelve to fifteen days by rubbing it with powdered salicylic acid and wrapping it in a clean napkin, washing the fish in several changes of water before use.
She also suggests using the powder and repeated rinsing to 'restore' fish that has already spoiled.
Historical editorial note: Do not use salicylic acid powder to preserve fish or attempt to make spoiled fish edible. This historical claim is unsafe; spoiled fish may contain toxins or harmful microorganisms unaffected by rinsing.
