No. 4032 — Uses for Frost-Damaged Potatoes
English historical translation of Molokhovets recipe No. 4032 from the 1901 Russian cookbook, retaining original methods and measures.
The author notes that frozen potatoes were long thought useless, but mildly frozen potatoes had begun to be used in several trades.
She lists starch production, soap for washing silk, syrup, bread, vinegar and paste for bookbinders and weavers.
For the period silk-cleaning treatment, frozen grated potato was mixed with water, and the resulting foam was used for washing.
Historical editorial note: Frost damage can change food quality and promote decay. Historical industrial uses are not modern food-safety advice.
