No. 4027 — Cultivating Artichokes
English historical translation of Molokhovets recipe No. 4027 from the 1901 Russian cookbook, retaining original methods and measures.
Propagate artichokes by seed or by offsets removed from old plants.
Sow seeds in a hotbed in March and transplant in May into rich, deeply dug soil that is not freshly manured.
Artichokes favour warmth and frequent watering during dry weather. Harvest the heads when ready.
Cut remaining stems near ground level after harvest and cover with straw in October.
In very harsh winters, lift plants with attached soil, remove dry leaves and keep in a greenhouse or cellar set in sand.
In spring carefully cut side shoots away from old stems and plant them in beds.
