No. 4023 — Growing and Using Pumpkins
English historical translation of Molokhovets recipe No. 4023 from the 1901 Russian cookbook, retaining original methods and measures.
Pumpkins need fertile recently manured soil and watering during dry weather.
The author makes the outdated claim that pumpkin is unhealthy for people with sedentary habits but suitable for physically active peasants.
Pound pumpkin seeds, warm them slightly and press out an oil praised for dressing salads and other foods.
For pumpkin bread, slice and simmer large pumpkins until soft, drain, sieve and combine 10 pounds pumpkin purée with 20 pounds flour and yeast, without adding further water.
To make a seed milk, pound pumpkin seeds, add water, knead or stir and strain. Serve with porridge or as a cooling drink.
Historical editorial note: The assertion that pumpkin is unsuitable for sedentary people has no general nutritional basis.
