No. 4020 — A Year-Round Supply of Green Onion Tops
English historical translation of Molokhovets recipe No. 4020 from the 1901 Russian cookbook, retaining original methods and measures.
Make a ball of tow and hang it in the kitchen before a window.
Fasten onion bulbs all around the ball with threads drawn through the tow using a needle.
Water often enough to keep the tow moist. When bulbs weaken or deteriorate, replace them with fresh ones.
For a continual supply, the author recommends making two or three such balls and hanging them in rotation.
Historical editorial note: Continually wet natural fibres can develop mould, so this period indoor-growing technique needs modern hygiene precautions.
