No. 4018 — Fresh Carrots in Spring
English historical translation of Molokhovets recipe No. 4018 from the 1901 Russian cookbook, retaining original methods and measures.
Carrots left in beds in dry soil and covered with clean straw or leaves may survive mild winters, especially if a further layer of manure is placed over the leaves.
Remove the manure when spring begins and the straw and leaves a little later.
The author nevertheless considers storage in pits preferable.
