No. 4014 — Fresh Winter Cress on a Cone

English historical translation of Molokhovets recipe No. 4014 from the 1901 Russian cookbook, retaining original methods and measures.

Take a circular wooden base eight to ten vershoks across. Nail on broad thin wooden strips from old baskets, ten to twelve vershoks long.

Gather and tie the strips at the top to form a cone or sugarloaf shape.

Cover with loose felt or ordinary tow, wet thoroughly and sow cress seeds all around its surface.

Stand by a window and water often enough to keep the covering moist.

Sow a fresh cone every two weeks for a continuous supply. Serve as salad or use to garnish mayonnaise dishes.
