No. 4000 — Dried Green Beans

English historical translation of Molokhovets recipe No. 4000 from the 1901 Russian cookbook, retaining original methods and measures.

Trim the stems and strings from green bean pods. Spread on a tablecloth and dry in the sun.

When thoroughly dry, store in glass jars tied with paper somewhere warm and dry.

Soak overnight in cold water before using. Next day boil until half-done, drain and finely slice diagonally.

Put in a saucepan with a spoonful of butter, salt and one or two lumps sugar. Barely cover with boiling water or broth and cook until tender.

Add boiled cream and serve. The author considers this the best method of keeping green beans for winter.

Historical editorial note: Sun drying requires verified moisture and hygiene conditions to prevent mould and spoilage.
