No. 3998 — Salted Green Beans

English historical translation of Molokhovets recipe No. 3998 from the 1901 Russian cookbook, retaining original methods and measures.

Wipe young green bean pods, remove their strings and cut or shred as usual.

Pack into jars, sprinkling with salt, cover with a wooden disk and weight with a stone.

When juice appears, remove the disk and pour warm melted fat over the beans.

Before use, soak in warm water, changing it several times. Use 1½ glasses salt per vedro beans.

Historical editorial note: Covering low-acid beans with fat and storing without controlled acidity or temperature is unsafe as a modern preservation method.
Original source: Read Russian recipe No. 3998. Historical quantities and terminology are retained. See the measurements guide. Period preparation and storage methods are not modern safety guidance.
