No. 3993 — Homemade Capers, Another Method
English historical translation of Molokhovets recipe No. 3993 from the 1901 Russian cookbook, retaining original methods and measures.
Boil young nasturtium seeds once in salted water, drain and dry on a sieve.
Alternatively salt the dry seeds for twenty-four hours, stirring frequently, then wipe them with a napkin.
Pack in small jars and cover with cooled mild vinegar that has been boiled beforehand.
After two weeks the source replaces the vinegar with fresh stronger vinegar boiled with allspice, bay leaf, cloves and cinnamon.
Historical editorial note: Historic staged weak-to-strong vinegar treatment does not establish a safe acidity for preservation.
Original source: Read Russian recipe No. 3993. Historical quantities and terminology are retained. See the measurements guide. Period preparation and storage methods are not modern safety guidance.
