No. 3992 — Homemade Capers from Nasturtium Seeds
English historical translation of Molokhovets recipe No. 3992 from the 1901 Russian cookbook, retaining original methods and measures.
Rinse young nasturtium seeds and allow to dry on a sieve outdoors.
Pack into a wide-necked jar and cover with cooled salted water strained through a napkin.
The source gives ¼ pound salt for 1 pound (2 glasses) water.
Pour a layer of Provençal olive oil over the surface, cork and tie with animal bladder.
Historical editorial note: Oil-covered fresh seeds in brine without verified acidity are not a safe modern shelf-stable preservation method.
Original source: Read Russian recipe No. 3992. Historical quantities and terminology are retained. See the measurements guide. Period preparation and storage methods are not modern safety guidance.
