No. 3972 — Fresh Cucumbers in Winter

English historical translation of Molokhovets recipe No. 3972 from the 1901 Russian cookbook, retaining original methods and measures.

Pick very firm green not-overripe cucumbers only after nights have grown cool.

Peel and cut into salad-like slices, somewhat thicker than usual.

Pack in large jars with a salt layer between each cucumber layer, the salt layers being a little thinner than the cucumbers. Finish with salt above and below.

Tie jars with animal bladder and keep on ice until frost.

Before serving in winter, soak cucumber slices in cold water and dress with Provençal olive oil, vinegar, optionally sugar, and pepper.

Historical editorial note: The historic heavy-salting and ice storage technique is not verified for safe long-term preservation.
