No. 3967 — Strongly Salted Cucumbers
English historical translation of Molokhovets recipe No. 3967 from the 1901 Russian cookbook, retaining original methods and measures.
Pack freshly picked firm cucumbers into a tub, sprinkling generously with salt.
When full, add a small wooden disk and stone weight. The author notes the cucumbers become very wrinkled.
One day before serving, cut the tips off both ends and soak in very cold water, replacing it repeatedly.
Historical editorial note: Unmeasured historical salting and soaking do not establish food safety.
