No. 3966 — Salted Cucumbers with Layers of Sand

English historical translation of Molokhovets recipe No. 3966 from the 1901 Russian cookbook, retaining original methods and measures.

Dry the cleanest river sand and sieve it finely.

Spread a layer of sand as thick as the palm on the barrel bottom, followed by blackcurrant leaves, dill and sliced horseradish.

Arrange cucumbers in a row, cover with another layer of herbs and then sand, and repeat until full. Finish with currant leaves and a top layer of sand.

Boil a brine of 1¼ pounds salt per vedro water, cool and pour until all cucumbers are covered. Refill when the level drops.

The author says cucumbers for any salting method should first spend twelve to fifteen hours in icy water.

Historical editorial note: Sand may introduce contaminants; this historical method is not a validated modern safe pickle process.
