No. 3959 — Cucumbers Pickled with Mustard, Horseradish and Spices

English historical translation of Molokhovets recipe No. 3959 from the 1901 Russian cookbook, retaining original methods and measures.

Peel fresh green cucumbers, cut lengthwise into four or more parts, wash and gently dry with a napkin, and place in a glazed pot.

Boil enough vinegar to cover and pour over the cucumbers. Leave two days, then drain, boil and pour back hot. Repeat after two more days.

Coarsely crush white and black pepper, cloves and a little more allspice. Chop horseradish, two onions and one or two heads garlic.

The author specifies 45 lots black mustard, mixed with the spices. Coat the cucumbers in the mixture and pack in jars with further horseradish, onion and garlic between layers.

Cover with freshly boiled strong vinegar, cool, tie with animal bladder and keep cold.

Historical editorial note: Repeated heating and unmeasured vinegar strength do not constitute validated modern shelf-stable cucumber preservation.
