No. 3958 — Keeping Cucumbers Fresh until Late Autumn

English historical translation of Molokhovets recipe No. 3958 from the 1901 Russian cookbook, retaining original methods and measures.

Peel cucumbers, cut into slices and pack into a jar. Cover with mild vinegar that has been boiled and cooled.

The period method says to drain and replace the vinegar if mould appears, pouring olive oil on the surface each time.

Before serving with roast meat, dress the cucumber slices with salt, sugar, olive oil, fresh vinegar and pepper.

Historical editorial note: Mould indicates potential spoilage. Replacing vinegar and topping with oil does not make contaminated cucumbers safe; the original method is not validated.
Original source: Read Russian recipe No. 3958. Historical quantities and terminology are retained. See the measurements guide. Period preparation and storage methods are not modern safety guidance.
