No. 3909 — Pink Shredded Cabbage
English historical translation of Molokhovets recipe No. 3909 from the 1901 Russian cookbook, retaining original methods and measures.
Shred cabbage and pack in a tub, moistening with water with or without salt.
Interleave with sliced dark-red beetroot and cover the top with more beetroot.
The beetroot gives the cabbage a pink colour and some sweetness. It should be boiled or, preferably, baked.
