No. 3906 — Shredded Sauerkraut with Wine
English historical translation of Molokhovets recipe No. 3906 from the 1901 Russian cookbook, retaining original methods and measures.
Measure three vedros shredded cabbage, pack into a tub, salt as usual (recipe No. 3898) and pound with a wooden mallet.
Pour one bottle inexpensive sweet white table wine evenly over the entire quantity, preferably using a small watering can.
Allow the cabbage to sour in the cellar in the usual way. The author praises its flavour.
