No. 3897 — Keeping Ordinary Fresh Cabbage
English historical translation of Molokhovets recipe No. 3897 from the 1901 Russian cookbook, retaining original methods and measures.
Hang sound cabbage heads in a cellar as described for cauliflower in recipe No. 3894.
Alternatively spread dry sand in the cellar and set the heads in it after removing yellowed leaves.
Use heads beginning to spoil immediately and dry out the cellar often by opening the window in dry weather.
Historical editorial note: A head showing spoilage should not be considered safe merely because its outer leaves are removed.
Original source: Read Russian recipe No. 3897. Historical quantities and terminology are retained. See the measurements guide. Period preparation and storage methods are not modern safety guidance.
