No. 3870 — Salted Barberries
English historical translation of Molokhovets recipe No. 3870 from the 1901 Russian cookbook, retaining original methods and measures.
In late autumn gather barberries on whole sprigs and put them in a jar.
Cover with boiled and cooled salt water and tie the jar. If mould appears, the original instructs replacing the brine.
Use for garnishing dishes or serve with pickles alongside roast meat.
For 3 glasses water the source takes 9–12 zolotniks salt, approximately ¼ glass.
Historical editorial note: Visible mould is not made harmless by simply replacing brine. The historic salting method lacks modern safety controls.
