No. 3869 — Keeping Barberries Fresh, Another Method

English historical translation of Molokhovets recipe No. 3869 from the 1901 Russian cookbook, retaining original methods and measures.

Choose large firm barberries and immediately put them in dry bottles, gently shaking to settle.

The author describes corking bottles, heating in a hay-padded water bath for one hour, cooling, sealing with resin and burying them in sand.

Use for winter compotes.

Historical editorial note: Heating stoppered bottles may create dangerous pressure and breakage and is not validated modern canning.
Original source: Read Russian recipe No. 3869. Historical quantities and terminology are retained. See the measurements guide. Period preparation and storage methods are not modern safety guidance.
