No. 3848 — Keeping Strawberries Fresh

English historical translation of Molokhovets recipe No. 3848 from the 1901 Russian cookbook, retaining original methods and measures.

Select large ripe but firm strawberries and put immediately into dry bottles, gently shaking to settle.

The author describes corking the bottles, warming them for one hour in a hay-padded water bath, then cooling, sealing with resin and burying in sand.

Use these berries for winter compotes and ice cream.

Historical editorial note: Heating corked bottles can cause dangerous pressure and breakage; this is not modern validated canning.
Original source: Read Russian recipe No. 3848. Historical quantities and terminology are retained. See the measurements guide. Period preparation and storage methods are not modern safety guidance.
