No. 3846 — Strawberry Mors for Ice Cream, Creams and Airy Pies
English historical translation of Molokhovets recipe No. 3846 from the 1901 Russian cookbook, retaining original methods and measures.
Rub very ripe fresh strawberries through a sieve.
For every 2 glasses purée take 1 glass sugar and mix thoroughly over ice.
Transfer to small one-pound jars, tie with animal bladder and keep on ice, but not for very long.
It may also be served as a dessert, stirring well before each use.
Historical editorial note: Raw fruit purée kept under an improvised cover is perishable and requires safe refrigeration.
