No. 3837 — Keeping Cranberries Fresh
English historical translation of Molokhovets recipe No. 3837 from the 1901 Russian cookbook, retaining original methods and measures.
The author recommends keeping cranberries in cold water in a cellar, claiming that the berries retain their taste through winter.
In the season when other berries are unavailable, these could be cooked in sugar to make preserves. The source gives 1 pound sugar, 1½ glasses cranberries and ½ glass water, after cleaning the berries.
Historical editorial note: Water storage in an uncontrolled cellar is a historical practice, not a validated modern food-safety method.
