No. 3830 — Lingonberry Jelly with Honey

English historical translation of Molokhovets recipe No. 3830 from the 1901 Russian cookbook, retaining original methods and measures.

Mash and strain berries without squeezing, or heat cleaned berries in their own juices without added water.

When the berries burst, drain without pressing through a sieve and then through linen.

Cook the clear juice with honey, measuring the liquid level with a thin splinter and reducing to the indicated mark as explained in the book's note on jelly.

Use 2 glasses honey for every 2 glasses juice. Serve with roast meat.
